At The Slow Bread Company, we believe this is by far the best sandwich in the world. You can adjust the amounts of ingredients to suit your taste. Before you tackle this mammoth lunchtime treat, pour a large glass of wine, switch off your phone and lock the door – this needs your full attention.
Mix the spring onions, Gorgonzola and mayonnaise together in a small bowl. Chill in the fridge.
Dry fry the bacon or prosciutto in a small frying pan, until crispy.
Lay out the bread, place some sliced chicken, avocado and tomato on one slice. Place the bacon on top and finish with the Gorgonzola mixture.
Carefully lay the other piece of bread on top, slice in half if liked, and enjoy.

2 slices streaky bacon or proscuitto
2 slices fresh sourdough, ciabatta or baguette
50 g (2 oz.) cooked chicken, sliced
½ avocado, sliced
1 vine tomato, sliced
